Introduction

Revenue Management is a management philosophy that increases the profitability of service companies with fixed capacity such as hotels, airlines, etc. In these sectors, there is currently a high degree of implementation. The restaurant sector has very similar characteristics to these industries, so its application would be very interesting, however, its application is not yet widespread.

The importance of the restaurant industry in our country is undeniable. In 2019, before the pandemic, the restaurant sector had 2.600 establishments, contributed 5% to the national GDP and offered employment to more than one million people. people during (INE, 2020). With Covid-19, the digitization process (digital cards) of restaurant companies has been accelerated, further favoring the application of Revenue Management.  

Given this context, the Rey Juan Carlos University, a pioneer and leader in training in Revenue Management for more than 13 years, launches the course aimed at professionals in the sector and students who want to specialize in Revenue Management in Restoration Centers.

Objectives

Offer, to the student who already has prior knowledge of Revenue Management strategies, a professional vision of the set of techniques and strategies (Forecasting, Menu Engineering, Benchmarking, Pricing, Segmentation, Management of Delivery platforms and Capacity Management and Overbooking , etc.) aimed at maximizing profit and customer value in restaurants and catering centers. In this way, the course focuses on providing the student with the necessary tools and analysis to understand the behavior of a restaurant center from a commercial point of view, as well as, above all, on providing him with the knowledge to apply the necessary levers to optimize the demand of the restaurant and obtain the maximum profit possible.
